Port to 1.21

Finally the mod has been ported past 1.19.2
It contains a carbon config dependency due to config requirements.
so plugins can be disabled.

And I upgraded the serializers to use minecrafts codecs to build the scripts together whereever it was feasable.
In general thanks to minecrafts codecs i could throw out a lot of inconsistencies, which is a huge plus.
